cake:
2 cups sugar
2 cups flour
2 tsp. cinnamon
1 tsp. salt
1 1/2 cups oil
4 eggs
3 cups grated carrots (or 1 bag match stick carrots)
1 tsp. baking soda

frosting:
8 oz cream cheese
3 1/2 cups powdered sugar
1/4 lb butter
2 tsp, vanilla
1/2 cup chopped walnuts

Directions:

Cake:
Mix all dry ingredients together in a large bowl.
Add the oil, eggs and carrots into the dry ingredients by hand. Do not use an electric mixer.
Pour into a 9x13 greased and floured pan. Bake at 350º for 35 - 40 minutes.
Cool cake before frosting.

Frosting:
Blend the cream cheese, butter, and vanilla.
Add the powdered sugar and mix well. Add the chopped walnuts and spread on top of cooled cake.

Personal Notes:
If you use the match stick carrots your cake can have a green tint to it after baking. The cake will be fine, this is because of the preservative on the carrots.
