5-rib standing rib roast - about 10 pounds
Salt and freshly ground pepper

Generously season the roast on all sides with salt and pepper.
Cover with plastic wrap and refrigerate for about 12 hours

Position a rack in the lower third of an oven and preheat to 450 degrees.

Place the roast beast fat side up on a rack in a large roasting pan and roast for 20 minutes, then reduce the oven temperature to 350 degrees. Continue roasting until an instant read thermometer inserted into the center of the meat, away from the bone, registers 125 - 130 degrees for very rare to medium rare, about 2 hours more.

Transfer the roast to a carving board, cover loosely with foil and let rest for 10-15 minutes.


Serve with Gorgonzola Sauce or Cognac Sauce (recipe listed)

We have been making this meal for Christmas for more years than I can remember. It is a family tradition and favorite. I can't imagine a Christmas now without making it. When it is time to carve the meat everyone seems to know and before I know it they are all standing around the kitchen island.
