Dressing;
1/2 cup vegetable oil
1 egg
1 1/2 Tbl. red wine vinegar
1 1/2 tsp.sugar
1 1/2 tsp. mayonnaise
1 tsp. garlic powder
1 tsp. Dijon mustard
1 tsp. dried tarragon,crumbled
1/2 tsp. onion powder
1/8 tsp. dry mustard

Salad
2 large heads butter or Boston lettuce ,leaves separated
6 cups assorted greens,such as curly endive,oak leaf lettuce and arugula
1 med. leek (white and pale green parts only)
halved lengthwise,cut julienne
1 med. red bell pepper,cut julienne
1/2 med. yellow bell pepper,cut in 1/4" slices
3 med. tomatoes,each cut into 8 wedges
3 hard-boiled eggs,shelled and sliced
1/3 cup freshly grated Parmesan cheese(about 1 oz.)

Dressing-
Blend all ingredients in processor until smooth and light.(Can be prepared 1 day ahead. Transfer to bowl. Cover and refrigerate. Whisk dressing to blend before using.

Salad-
Line 8 plates with butter lettuce leaves. Toss 6 cups mixed greens with enough dressing to taste in large bowl. Divide greens among plates. Top with leek and bell peppers. Garnish with tomato wedges and egg slices. Sprinkle Parmesan cheese over. Serve,passing remaining dressing separately.

Sounds like a taste of spring and a taste of summer. The dressing makes this salad.as I recall. It was served on menu with Cioppino.
