1 c sugar
¼ t salt
¼ c flour
2 T cornstarch
1½ c water
2 egg yolks, beaten
1 T butter or oleo
¼ c lemon juice
1 t lemon zest

Directions:
Directions:
Blend sugar, salt, flour and cornstarch. Stir in water. Cook over low heat until thick. Stir little of hot mixture into yolks. Add eggs to mixture and cook 1 minute longer, add lemon zest and lemon juice. Add butter or oleo. Pour into baked pastry shell, let cool. Top with meringue and bake until light brown, about 10 to 15 minutes in 250° oven.
