2 cups sugar
1 cup oil
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
4 eggs
2 cups frozen zucchini, drained
1 cup chopped walnuts.

Directions:
Directions:
Mix the sugar, oil, eggs, and zucchini, then add the remaining dry ingredients. Put in Bar pan and bake at 350º for 22-25 minutes. When cool frost with:
CREAM CHEESE FROSTING:
8 oz package of cream cheese, softned,
3/4 cup butter,
1 tsp vanilla,
4 cups powdered sugar or more for desired consistency,
1 1/2 Tbls milk

If your lucky to have a garden, pick your zucchini at about 8-10 inches, wash, slice into long strips, take out seeds. Put in food processor or grind to small pieces. Put 2-3 cups in a zip-lock sandwich sized bag. It lays flat and stacks in deep freeze nice. Very quick and easy for bars or cake or to throw in stews or soups.
