8 Tbsp butter
3 lb ripe tomatoes, quartered
4 stalks celery with leaves, chopped
1 large onion
3 large carrots
2 leeks, chopped
3 cloves garlic, minced
1 Tbsp tarragon
6 Tbsp fresh parsley, snipped
1/2 tsp basil
1/2 tsp thyme
2 bay leaves
1/3 cup white wine

2 10-oz cans chicken broth
2 cups water
1 cup uncooked white rice
salt and pepper to taste

1 7-oz can crab or other seafood
1/4 cups gin (optional)

Directions:
In large stock pot, melt butter and add next 12 ingredients and sauté for 20 minutes. Add broth, water and rice, cover and cook over medium heat until rice is cooked (about 30 minutes). Reduce heat and simmer for 1-2 hours. Add crab and gin. Adjust seasonings, remove bay leaves and serve.
