5 pounds St. Louis Style Ribs
1 Liter Bottle of Coca Cola
1 Bottle very Hoppy Beer (optional)
Liquid Smoke (optional)

Prepare rub by combining all ingredients for rub and set aside.
 

Dry Rub

3 cup Brown sugar
¼ cup Kosher salt
¼ cup Paprika
2 tbsp Ground cumin
2 tbsp hot Chili powder
2 tbsp cayenne
2 tbsp ground black pepper
2 tbsp red pepper flakes

Trim skin and fat off of ribs. Place ribs on large piece of plastic wrap or large platter, if using Liquid Smoke, rub it liberally on both sides of meat. Then, apply rub generously to ribs on both sides and let ribs sit for 6-10 hours in refrigerator. (If you are short on time, you can reduce the time the rubbed ribs set in the refrigerator to a minimum of 1 hour.)

5 hours prior to serving -
Preheat oven to 350º. Remove ribs from refrigerator. Transfer ribs from plastic wrap rib bone side down in a large roasting pan. Pour 1 liter of coca cola and 1 very hoppy beer on ribs in roasting pan. Bake ribs with foil covering for 3 hours.

While ribs are cooking, prepare Barbecue sauce.
 

Barbecue Sauce

½ tbsp crushed red pepper
½ cup vegetable oil
1-½ cups chopped yellow onion (1 large)
1 tbsp minced garlic (3 cloves)
1 cup (10 oz.) tomato paste
1 cup cider vinegar
1 cup honey
½ cup Worcestershire sauce
1 cup Dijon mustard
½ cup soy sauce
1 cup (8 oz.) hoisin sauce
2 tbsp chili powder
1 tbsp ground cumin

At end of 3 hours, reduce oven temp to 250º. Remove ribs from pan, discard liquid. Transfer ribs back to pan basting liberally on both sides with barbecue sauce. Make sure ribs are rib side down and return to oven covered for 2 more hours.

NOTE: For wet ribs - Apply barbecue sauce as above. If you prefer dry ribs - toss in remaining rub and return to oven as above.

When done, remove ribs and cut to single or double sets of ribs. Spray foil with cooking spray or coat foil with olive oil. Transfer cut ribs uniformly (either rib up or down) to foil, wrap and set aside, refrigerating if necessary. About 40 minutes prior to serving, fire up the grill and cook ribs on grill over medium heat 5-7 minutes on each side. Remove from grill and let set for 10 mins.

Serve with any additional rub and barbecue sauce on the side.
