No-fry Doughnuts Recipe

21/4 tsp active dry yeast
1/4 c warm water
11/2 c warm milk
1/3 c shortening
1/2 c sugar
2 eggs
1 tsp salt
1 tsp nutmeg
1/4 tsp cinnamon
41/2 to 5 c flour

Glaze
1/2 c butter
2 c icing sugar
5 tsp water
2 tsp vanilla

Directions:
Directions:
I use bread machine or instant yeast so no soaking is necessary. If using traditional, mix yeast in warm water with 1 tsp sugar and let sit for 10 min. Mix all ingredients together with 21/2 c flour. Beat until smooth. I let this sit for 1 hour to make a sponge, then beat in remaining flour to make a soft dough and let this rise for another hour. Punch down dough. Turn onto floured surface and roll out to 1/2 inch thickness. Cut with 2 3/4 doughnut cutter. Cover and let rise until doubled in size. Bake at 350º for 20-30 minutes or until lightly browned.

Meanwhile, prepare glaze. In a saucepan, melt butter over low heat. Stir in icing sugar, water and vanilla. Keep warm and dip warm doughnuts in, one at a time. Drain on wire rack. Makes 2 doz. (I cut the glaze in half and just brushed the tops of the doughnuts.)

I don't have a doughnut cutter so I made them like mom used to make "punchkies". Cut off a piece of dough, flatten it in your hand and tear a hole in the middle. Make sure the dough is very flat and the hole is quite large.
