Ingredients:
Ingredients:
1 cup panko crumbs
1 tbsp of olive oil
1 tbsp taco seasoning
6 oz. reduced fat cream cheese (or add the whole stick of cream cheese no one is looking:)
1/2 cup shredded cheddar cheese
3 Peppers (Red or Yellow or both) or can use jalapeños if you are daring, Cut all peppers up into small pieces to saute.
4 chicken breasts

Directions:
Directions:
Preheat the oven to 375

In a skillet over medium heat, sauté the peppers in olive oil and pepper to taste.

In a shallow bowl or dish combine panko, cheddar, and taco seasoning.

In another bowl combine sautéed peppers and cream cheese.

Using a knife, cut a pocket into the side of each chicken breast, or horizontally slice the chicken through the center, until it is almost butterflied. Season the chicken lightly with salt and pepper, and then divide the cream cheese mixture evenly between each chicken breast’s pocket.

Dip the chicken pieces one at a time into the panko mixture, making sure to coat the chicken completely. I place the chicken on a baking rack in a cookie sheet and bake for about 40 minutes, or until chicken is cooked through.

It is crucial to the recipe to lick all remaining Cream Cheese/Pepper goodness from the bowl while chicken is baking!
