1 lb spaghetti
1 lb bacon, cut into 1/2” pieces
4 eggs, beaten well
Fresh ground pepper (to taste - I use a lot!!)
Salt
Parmesan/Romano Cheese (at least 1/2 cup)

Cook pasta according to directions using 2-3 T salt in water. Cook to al dente (do not overcook)

While pasta is cooking, brown bacon tip desired crispness.

Put beaten eggs and pepper in large pasta bowl.

Drain pasta (reserving liquid) and dump pasta into raw egg mixture. Stir immediately to create a ‘sauce’ with the egg mixture. If too dry, add 1/2c- 1 cup reserved pasta water.

Well pasta is blended into egg mixture well, pour hot bacon with bacon grease onto pasta in a line.

Pour cheese onto pasta in a line - creating a cross for presentation. Mix well before serving. Add more salt, pepper and cheese to taste.

Serve with cooked peas, bread and salad.

This is a family favorite from the time our kids were really small. It is often the dish we serve the first time someone comes to dinner - because it is a little different and EVERYONE likes it!
