1 1/4 lb pork tenderloin, cut into 1 1/2 inch thick slices, pounded slightly
1 Tbsp Dijon mustard

2 Tbsp butter
1/8 tsp salt

1/2 cup beef broth
1/2 tsp dried tarragon, crumbled
1/2 cup light cream
ground pepper to taste

Spread one side of meat slices with mustard. In heavy skillet melt butter and add pork medallions, mustard side down. Sprinkle with salt. Reduce heat to low and cook for 5 minutes on each side until no longer pink. Remove meat and keep warm.

Add beef broth and tarragon to pan drippings, stirring to scape up brown bits. Simmer 2 min to reduce about 1/2. Add cream and simmer, stirring, until sauce is slightly thickened. season with pepper and pour over medallions.
