2 lbs lean ground turkey
1 med onion, chopped
1 4 oz can diced green chilies
1 16 oz (500ml) jars enchilada sauce
1 8 oz jar med salsa
1 15 oz pkg (10) flour or corn tortillas
1/2 lb cheddar, grated
1/2 lb Monterey Jack cheese, grated
1 10 oz can cream of mushroom soup

Brown ground beef with onion. Drain. Add chilies, stir and set aside.

To Assemble:
Mix enchilada sauce and salsa in large bowl. Dip tortilla in sauce and place on a piece of waxed paper. Put a large spoonful of meat mixture in the centre and top with a handful of cheese. Roll tortilla up and place in a 9 x 13 greased pan. Repeat.

Combine mushroom soup with remaining enchilada sauce and pour over tortillas. Top with any leftover meat and cheese.

Bake at 350 for 20 minutes. Serve with rice, beans, iceberg lettuce, sour cream, etc.

This is my most requested recipe. It feeds a crowd if you serve it with refried beans, rice and salad. Tortilla chips and salsa are a great accompaniment. Try using ground turkey for a change.
