5 large squash
1 lb. ground meat
2 med. onions, chopped
2 carrots, chopped
1 green bell pepper, chopped
2 cloves garlic
2 tomatoes, chopped
1½ c beef stock
1½ c burgundy
arrowroot for thickening gravy

Directions:
Directions:
Scoop out centers of zucchini and set aside. Brown ground meat in skillet with onion and garlic. Add carrots and bell pepper. Simmer a few minutes, add tomatoes and beef stock. Simmer few more minutes. Thicken with arrow root. Arrange squash in baking dish. Fill with meat mixture. Pour ¼ cup burgundy over stuffed zucchini. Bake uncovered in 325º oven for 45 minutes or until squash is tender. Pour liquid from baking dish into saucepan and add 1¼ cups of burgundy. Thicken with arrowroot and pour over squash. Serve.
