8 eggs
2 cups corn starch
2 cups granulated sugar
2 pkg Lievito Bertolini
pinch salt

Preheat Oven 350º
In a stand up mixer beat eggs and Lievito Berolinil and sugar until very fluffy and frothy about 15 minutes. Mixture should double in volume

In a separate bowl sift corn starch and salt. Begin folding dry mixture into egg mixture. fold thoroughly.

Put batter into 10" cake pans or cookie sheets.

Bake 10" cake pan about 30 minutes or until golden brown
Bake sheet pan for less time about 20 minutes or until golden brown

When cake comes out of oven----invert cake to cool

Carefully remove cake from pan It will stick so you need to work at it

Cut 10 cake into half and fill each layer with cream or filling of your choice.
You can use any extract you prefer- lemon is excellent
I use casata cream with this cake. I will repeat recipe
