Ingredients: 3 T. Minute Tapioca 3/4 C. Granulated Sugar 1/3 Dark Brown Sugar firmly packed 1/4 Tsp. Salt 2 Tsp. Ground Cinnamon 1/2 Tsp. Ground Nutmeg 5-6 C. Granny Smith Apples, cored & sliced

Directions:Mix all ingredients and stir to disperse sugar onto all slices. Pour into pre-prepared pastry crust and top with top pastry crust. Fold top pastry crust in fourths, and cut 3-4 slits on sides of folds and cut off the tip at the center and arrange pastry crust over the apples evenly, pinch the top crust to the bottom crust, or press down with the edge of a spoon for a scalloped look. Sprinkle sugar granules over the top crust for added flavor.
Place on flat cookie sheet to catch spills and bake in preheated oven at 400º for about 35 minutes, You can make a ring of aluminum around the pastry edges to keep them from becoming darker than the center.
Option 1: Can also be made in a deep baking dish 9x9, with crust only on the top of apples.
Option 2: Cut 10 Carmel squares in half and place scattered inside the pie for Carmel Apple pie and drizzle Carmel sauce across the top after pie is baked and cooled.
Serve with ice cream! |

Notes: Other apples can be substituted for Granny Smith Apples, but these apples retain their sliced shape, have the best flavor and consistency, not cooking down like applesauce in the pie.
