3 eggs, beaten well
1½ c sugar
3 T lemon juice
3 T butter, melted
1 T white vinegar
1½ t vanilla
1 - 9" pastry shell, unbaked

Directions:
Directions:
Preheat oven to 350º. Line pie pan with pastry dough; crimp edges, then set aside. In medium bowl, beat egg whites until stiff peaks form. Set aside. In large bowl, whisk together egg yolks, sugar, melted butter, lemon juice, lemon zest, vinegar, and vanilla extract until blended. Gently fold egg whites into lemon mixture until completely incorporated. Pour filling into pie crust. Bake for 30 to 35 minutes, or until knife inserted in the center comes out clean and pie is browned on top. NOTE: Coconut may be added to this recipe.
