3 slices of bacon
1 pound of extra lean or lean ground beef
1 medium onion
1/3 cup chopped green bell pepper
1 clove of garlic finely minced
1 can (14.5 ounces) of diced tomatoes (Hunts roasted garlic)
1 cup of water
1/2 cup of ketchup
1/2 cup basmati rice uncooked
1/2 teaspoon of chili powder
1 teaspoon of taco seasoning
1/2 teaspoon of Worcestershire sauce
1/2 teaspoon of salt
dash of black pepper
shredded cheese

In a large skillet, cook bacon until crispy, remove to paper towels to drain

In a large skillet brown the ground beef, stirring and breaking up as it cooks. Add onion and green pepper and cook until onion is softened. Add garlic and cook stirring for 1 minute. Add tomatoes, water, ketchup, rice, chili powder, sugar and Worcestershire sauce, salt and pepper.
Bring to a boil over medium-high heat. Reduce heat to medium-low, cover and cook for approx. 30 minutes or until rice is tender (if rice is still uncooked and there is not a lot of water left in the casserole add more and continue to cook until rice is tender.) Top with crumbled bacon and shredded cheese, if desired.

Top with Shredded cheese and serve

I have always adjusted the spices to taste, often adding extra Taco seasoning and chipotle chili powder, and/or seasoning salt.
