2 1/2 tbsp. butter
2 1/2 tbsp. flour
1 tsp. salt
1 tsp. ground mustard
2 1/2 C. milk
2 1/4 C. cracker barrel x-tra sharp cheddar (1 unit of cheese)
2 1/4 C. uncooked elbow macaroni

Directions:
Directions:
In saucepan, melt butter. Remove from heat; blend in flour, salt and dry mustard. Add milk; heat stirring constantly until sauce thickens a little and is smooth. Add 1 ½ C. cheese, heat until melted, stirring occasionally. Meanwhile, cook macaroni as directed, drain. Combine with sauce in 2 quart casserole. Top with remaining cheese.

Bake 375 20-25 min.

I usually make this the night before and add all the cheese in the sauce. If I want it cheesier, I just add some shredded cheddar on top before baking. I think it is better if it sits a while before baking.
