2 lb. beef stew meat
flour to dust beef
2 T. olive oil
2 cloves garlic (minced)
1 medium onion (quartered)
¾ c. wine
1 can tomato soup (or tomato sauce)
1 t. thyme
1 t. basil
½ c. catsup
4-5 carrots, peeled and cut on diagonal into thick slices
1 ½ c. celery, cut on diagonal into thick slices
4-6 potatoes, peeled and quartered
water, salt and pepper to taste

Brown flour-dusted beef in olive oil. Add garlic and onion. Sprinkle with salt and pepper. Cook until onions are starting to brown. Stir in tomato soup or sauce
Add wine and water as needed. Cover and simmer for 30 minutes.
Add thyme, basil, catsup, carrots, celery and potatoes. Cover and simmer 1 ½ hours or until tender (on stove top or in oven at 350ºF).

I also like to dice bacon, brown it in the stew pan, and remove the bacon leaving the fat in the pan. I use this fat plus just a little olive oil to brown beef. Then I add back the bacon when the potatoes are almost tender at the end of the cooking time. JoAnn was my mom's best friend and they shared many recipes.
