Grandma Jazz's Famous Meatloaf Recipe

2 lbs lean hamburger
2 eggs beaten (I don't bother to beat just crack em and pour in)
2 tsp salt (I use seasoning salt)
3/4 tsp pepper (or seasoning salt)
1 cup cracker crumbs, oatmeal or bread crumbs; mom used whatever she had on hand
(I use Saltines or Ritz mom said those are the best)
2 (LARGE) cans tomato soup (lots and lots)
2 Tbsp Worcestershire sauce (Yep!)
1-2 Tbsp Mustard (swirl it on top of soup, you have put all the cans in one large container)
1 Onion chopped & saute'd - optional but mom loved her onions (But she never made us eat em!)
Several slices of cheddar cheese

Mix together (with your hands to get it all smooth and consistent) hamburger, eggs, oatmeal/crackers/bread crumbs, salt, pepper,˝ can tomato soup, 1 tsp Worcestershire sauce and onion; if desired, we do one with onion and one without (mom mixed the tomato soup, Worcester AND MUSTARD!) then you add a little bit of that mixture to the hamburger.
Form into oval shaped loaves. (Or whatever shape it needs to be to fit in the pan especially when your feeding a large crowd!! ha ha Oh sorry I am not suppose to be funny I will keep it to the facts). sure Sandi!
Add a little oil to a skillet and cook meatloaf loaves slowly until browned on all sides. Drain grease, place both loaves in skillet, side by side. Mix together 1 1/2 cans of the tomato soup with Worcestershire sauce and mustard. Pour sauce over meatloaf, cover and simmer meat loaf until meat is cooked through, (no longer pink inside) about 1 1/2 hours. You may need to add more liquid if needed.

Just before serving lay (lots of) sliced cheddar cheese across the the top of each loaf and allow the cheese to melt over the meat loaf. Slice meat loaf and serve with sauce.

When mom used crackers she would make us kids smash them up for her, probably to give us something to do. (smashing is a Must they should be fine so you don't get a big bite of cracker Just smooth hamburger) when we were growing up grandma used whatever she had on hand, Linda prefers oatmeal, Cheri use breadcrumbs and Sandi likes crackers.
You haven’t eaten a great meatloaf until you’ve had Grandma’s!
Linda, Sandi and Cheri have been making grandma’s meatloaf for over 35 years and we have all added our own input to this recipe ( Sandi’s are of course in parenthesis because she loves Grandma’s meatloaf or is just really opiniated )
Mom usually served it with baked banana squash and potatoes. (These side dishes are a must!! Never, Never serve mom's meat loaf without mashed potatoes and squash she would be horrified)
You may want to double this recipe as everyone needs leftovers.
We all grew up on Grandma’s meatloaf and love it. This obviously was her signature dish.
