Ingredients:
Ingredients:
1/4 cup Soy Sauce, 1 cup Coca Cola, 1/2 cup dark brown sugar
2 T. Dijon Mustard, 3 T oil, 2 T. Worcestershire, 1/3 cup ketchup
2 cloves garlic, minced, 1 T. dry mustard, 2 T. Balsamic Vinegar
1 tsp. ginger, 1 tsp. thyme, 5 lbs. pork roast - boneless

Glaze:
1 cup brown sugar, 1 T. cornstarch, 1/2 tsp. dry mustard
2 T. butter, 1/3 cup balsamic vinegar, 2/3 cup Coca Cola
Sea Salt and freshly ground pepper

Directions:
Directions:
Combine all ingredients (except roast) to form a paste. Set the roast in a zip lock bag & pour in the marinade and seal. Set the bag in a serving bowl large enough to steady the roast and place in the refrigerator for 24 hrs., patting and turning every few hours to make sure the marinade covers the roast evenly. This ensures the marinade covers the roast so that the roast is tender, juicy and tasty.
Remove the roast from the marinade and place in a roasting pan - fat side up. Do not add water. Do not cover. Roast at 325º until the meat thermometer reaches 175º. Allow 30 or 40 minutes per pound for roasting, so a 5 lb. join roast would take 2 1/2 hours to 3 hours. During the last 30 minutes brush on the glaze. If you prefer, you can just as easily cook on the grill or in the smoker. Remove from the oven and put on a platter. Make a foil tent and cover the roast to seal the steam and rest the meat. NOTE: Instead of roasting at 325º, you can roast at 250º for twice as long, and roast will be even more tender.

Glaze:
Mix together all of the ingredients in a sauce pan. Simmer and stir to thicken. Brush or spread the glaze on the roast frequently during cooking. You can also serve any remaining glaze on the meat when serving the slices if you like.

Personal Notes:
I'm going to try this recipe this weekend for Super Bowl. It looks really good, although John Pemberton might be horrified to know the Coca Colas he created would be used in cooking! He was a chemist.
