6 slices bacon, medium diced
1 red onion, finely sliced
3 garlic cloves, finely chopped
3/4 cup white wine vinegar
1/2 cup olive oil
2 tbsp. sugar
4 sweet potatoes, peeled, cooked, cut into 1-inch cubes, kept warm
4 green onions, finely sliced

Cook bacon until crisp. Remove from grease with a slotted spoon and place on a paper towel-lined plate. Drain bacon fat. Put 2 tablespoons of fat back into pan and return to heat. Add the onions and garlic; cook until soft. Remove pan from heat and add vinegar, olive oil, sugar and reserved bacon. Place the potatoes in a large bowl, pour dressing over; mix. Season with salt and pepper. Gently fold in the green onions. Serve at room temperature.

This recipe is great with ham sandwiches. It is simple to make and for some reason, tastes better the next day. Just make sure you take it out of the refrigerator to reach room temperature before serving.
