1 Large Box (4.6oz) Vanilla Jello Pie Filling
NOTE use cook and serve not instant)
3 Cups Milk
2 Eggs
1/2 Cup Brown Sugar
1/2 Stick Butter (melted)
2 Pie Crusts (Frozen)
2 Cups Coconut (hold back 1/4 cup for topping)
1 teaspoon vanilla
1 teaspoon coconut flavoring

Directions:

Bake pie crusts in 350 degree oven until brown

Filling:
In microwave bowl put milk, stir in pudding mix, add 2 beaten egg yokes (save whites for icing) - cook in microwave until thickened, stirring occasionally. When thick add brown sugar, butter, coconut, vanilla, and coconut flavoring.
Pour into baked crusts - add icing

Icing:
Whip egg whites until stiff beating fast in mixer
Add 2 Tablespoons sugar and mix
Put icing on pie and sprinkle with coconut and bake until brown
