1 lb. Boneless, skinless chicken breasts cut into strips
1 T. Vegetable oil or Coconut oil
2 Tsp. Chili Powder
1 1/2 Tsp. Cumin
1/2 Tsp. Garlic Powder
1/2 Tsp. Dried Oregano
1/4 Tsp. Seasoned Salt
1 15 oz. can diced tomatoes with green chilies or 6-8 quartered tomatoes
1 Medium Onion sliced
1 Med. Green Pepper cut into strips
1 Medium Red pepper cut into strips

Directions:
Directions:
Preheat oven to 400º. Place chicken strips in well oiled 9x13 baking dish and bake 35 minutes until chicken are cooked tender.

Combine oil and spices, drizzle over chicken, add veggies to dish and stir well to coat. Bake another 15-20 minutes.

When time is short, I have mixed chicken, veggies, oil and spices all together and bake 35-45 minutes without baking separate. Turns out just the same. Serve with flour tortillas, sour cream, guacamole, diced tomatoes and onions as desired. Hot sauces is optional.
