Jalapeņos enough for 4-5 pints sliced
6 cups vinegar
2 cups water
Optional garlic cloves and sliced onions
4 pint jars, seals and rings

Directions:
Directions:
Wash jalapeņos and slice into rings and discard stem.
Put jalapeņos in pan and add the vinegar and water. Add garlic and onions if using.
Rule of thumb brine should cover the sliced jalapeņos, if not make more brine cut in half or less.
Cook until the bright green color is gone, stirring once or twice..
Put into jars and wipe tops of jars before put seal and ring on. I tip upside down on a towel and cover for an hour. Let set a week before using.
