1/2 Head Green Cabbage
1/2 Head Purple Cabbage
6-8 Carrots shredded
1/2 C. Raw Sunflower Seeds
2-3 Mangos sliced and diced

Dressing:
1/2 C. Coconut milk
4 Limes juiced
1 T. Coconut nectar or raw agave
1/2 T. Grated Fresh Ginger

Directions:
Directions:
Thinly slice or shred the green and purple cabbages and carrots. Add diced mangos.

Mix dressing ingredients and power over salad and toss well to mix in. Add the sunflower seeds prior to serving or they will become soggy.

Note: Use food processor to shred veggies. Use hand grater to grate ginger very fine. Refrigerate with dressing over salad one hour prior to serving.

Excellent salad for large groups as it makes a lot. The mangos add a sweetened flavor to the dressing along with the coconut nectar, which could be substituted with pure maple syrup
