5 eggs separated
3/4 c sugar
3 tbsp cocoa
3/4 c sifted flour
1 1/2 tsp vanilla

2 c whipped cream

Optional:
Fresh raspberries or strawberries

Directions:
Directions:
In two bowls, separate the eggs. Beat egg whites until stiff, put aside. Beat egg yolks, add sugar, cocoa flour and vanilla. Mix and fold in the egg whites.

Line a jelly roll pan or 9 x13 cookie sheet or jelly roll pan with wax paper. Pour batter into pan

Bake in a preheated 400º oven for 20 minutes. Place a damp tea towel on working surface, remove jelly roll from oven and invert pan onto damp towel. Peel wax paper off the jelly roll and roll cake on towel.

Cool, unroll cake and fill with whipped cream, Roll up.

Serve with fresh raspberries or strawberries.
