¾ c sugar
1½ t cornstarch
1½ T flour
¾ c hot water
2 egg yolks, beaten
¼ t lemon zest
¼ c lemon juice
1 T butter/oleo
salt to taste

1½ c sugar
3 T cornstarch
3 T flour
1½ c hot water
3 egg yolks, beaten
½ t lemon zest
½ c lemon juice
2 T butter/oleo
salt to taste

INGREDIENTS for 2 pies:
3 c sugar
6 T cornstarch
6 T flour
3 c hot water
6 egg yolks, beaten
1 t lemon zest
1 c lemon juice
4 T butter/oleo

INGREDIENTS for 1½ recipes:
2¼ c sugar
4½ c cornstarch
4½ c flour
2¼ c hot water
4 egg yolks, beaten
¾ t lemon zest
¾ c lemon juice
3 T butter/oleo
salt to taste

Directions:
Directions:
Blend sugar, salt, flour and cornstarch. Stir in water. Cook over low heat until thick. Stir little of hot mixture into yolks. Add eggs to mixture and cook 1 minute longer, add lemon zest and lemon juice. Add butter/oleo. Pour into baked pastry shell, let cool. Top with meringue and bake until light brown, about 10 to 15 minutes in 250° oven.
