8 small boneless pork loin rib chops (1 1/2 pounds)
Salt
2 to 3 teaspoons freshly ground pepper
2 to 3 tablespoons olive oil
6 tablespoons balsamic vinegar
1/4 cup chicken broth
1 tablespoon chopped fresh sage
2 tablespoons unsalted butter, cut in small pieces
Large fresh sage leaves

Directions:
Directions:
Sprinkle chops with salt. Sprinkle half of pepper evenly over one side of chops. Press pepper into surface of each chop so pepper adheres. Sprinkle remaining pepper over other side and press to adhere.
Heat a large skillet over medium-high heat. When hot, add 2 tablespoons olive oil. When oil is hot, add half of chops. Cook until brown, about 6 minutes. Turn and cook on other side, about 5 minutes longer, or until chops are cooked through. Transfer to platter and set aside. Add more oil to pan. Cook remaining chops. Add to platter and keep warm.
Pour off all but 1 tablespoon of drippings from pan. Add vinegar and broth to pan. Bring to a boil. Stir in chopped sage and any meat juices that have collected on platter. Cook, stirring up any browned bits on bottom of pan, until liquid is reduced by half. Whisk in butter.
To serve, place 2 chops on each of 4 warm dinner plates. Pour sauce over chops and garnish with sage leaves.
