6 large Cortland apples
2 1/4 cups of unsweetened apple juice
2 cups of sugar
1/4 cup of lemon juice
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of ground cloves

Directions:
Directions:
Core, peel and dice apples into bite size pieces. Add to a pan with sugar, lemon juice, apple juice, and spices. Simmer for approximately 30 minutes until the apples turn a richer amber shade and a spoon pushed across the bottom of the pan reveals the bottom for an instant. The apples should be transparent and the jam should be glossy but not too thick. Pour into sterilized jars and seal with sterilized lids. Makes six 6 oz. jars.
