1 medium head of red cabbage or ½ large head
3 slices bacon
½ small onion minced
2 Apples cored and diced (peeling can remain)
¼ tsp. salt
1/8 C. boiling water
½ tsp. caraway seeds
4 T Brown Sugar
¼ C. Cider Vinegar or Red Wine Vinegar
2 T Flour

Cut head of cabbage into four sections, remove the core, shred the cabbage finely and soak in cold water.

Cut the bacon in small pieces, place in stew pan and sauté over low heat. When bacon is well fried out remove the scraps of bacon, simmer the minced onion and diced apples in the fat until tender.

Lift the cabbage from the water with hands, leaving it moist. Place it in the stew pan, cover and let simmer for 10 minutes. Add salt, caraway seeds and 1/8 C. boiling water, cover and summer until tender. Dissolve flour in diluted vinegar or red wine and brown sugar. Add these ingredients to the cooked cabbage mixture and stir. Simmer a few minutes longer, remove from heat, cover and let stand so that season will be well blended.
