1 c egg whites (7 or8)
1/2 t cream of tartar
2 c all purpose flour
1 1/2 c sugar
3t baking power
1t salt
1/2 c oil
7 unbeaten egg yolks
3/4 c water
1t vanilla

Directions:
Directions:
Preheat oven 325 degrees . Whip egg whites & cream of tartar until very stiff peaks are formed. Sift flour, sugar, salt, & baking powder into mixing bowl. Make a well in the center of the flour, add the oil, egg yolks, water, and vanilla. Beat w/ a wooden spoon until smooth. Gradually pour egg yolk mixture over whipped egg whites, folding gently w/ rubber scraper just until blended. Do not stir.

Pour into an ungreased 10" tube pan. Bake 1hr10min. Immediately turn pan upside down to cool

This cake was a family favorite. Mother (Lura Carico) had the knack of making this cake, also so light and airy.
