1 1/2 lbs. russett potatoes
1/4 c. green pepper,chopped
3 T flour
1/8 tsp. pepper
1 1/2 c. milk
1 1/2 c. cooked ham, chopped
1/4 c.chopped onion
2 T butter or margarine
1/2 tsp. salt
1/2 tsp. dry mustard
1 c. grated cheddar cheese

Peel and slice potatoes and set aside. Saute the onions and green pepper in the butter. Add to the onions and green peppers, the flour, pepper, salt and dry mustard. Gradually add the milk cooking and stirring till the sauce thickens. Add 3/4 c. of the cheese into the sauce (save the rest for topping) In a greased 2 1/2 qt. casserole, layer potatoes, ham, and cheese sauce. Sprinkle remaining cheese on top.. Cover and bake at 350 degrees for 1 hour or untill potatoes are done.
