6-8 Red medium potatoes cooked until tender
½ Chopped Sweet white onion
3 slices bacon fried and diced
2-3 Boiled Eggs diced
½ tsp. Salt
¼ Tsp. ground pepper

Dressing:

¼ C. Vegetable Oil
¼ C. Malt Vinegar
¼ C. Brown Sugar


Directions:
Directions:
Cook red potatoes with skins on, cool slightly and dice. Sauté Bacon diced up with chopped onion, add pepper, and diced boiled eggs.

Combine dressing ingredients: Pour over potato salad, while potatoes are warm. Serve slightly warm or room temp, do not refrigerate prior to serving. Left overs can be refrigerated.

This recipe was given to me by our German friend Ben Wolfe. Can be made with out without boiled eggs but he says that it's authentic with the eggs.
