Soak 1/2 C. Small Pearl Tapioca in bowl covered with 1 C water for 1-2 hours and set aside.

In Double Boiler add:

2 C canned evaporated milk (1 can)
2 Cups 2% milk
3/4 C granulated sugar
1/2 tsp. salt
3 egg yolks
1 T pure vanilla

In separate bowl:
3 Egg whiles at room temperature
1/2 tsp. Cream of Tartar

In double boiler with 1/2 cup pearl tapioca soaking, add canned milk and 2% milk, sugar and salt. Bring double boiler to boil and over medium heat while whisking continually. Lower the heat and let the mixture simmer for 10 minutes, whisking occasionally. Remove from heat and quickly whisk in egg yolks mixed with vanilla into the boiler.

In separate mixing bowl, beat the egg whiles with cream of tarter until just stiff, slowly fold in pudding mixture with large spoon or spatula.

Options: Can add 1/2 tsp ground cinnamon and 3/4 tsp. of ground nutmeg for Two-Spice Tapioca Pudding alternative
