Easy Cheesy Cream of Broccoli Soup Recipe

Ingredients: 1 head of broccoli, chopped 1 cup carrots, grated or pre-shredded 1 medium onion, finely chopped 2 to 3 garlic cloves, chopped 4 tbsp. butter 1 tbsp. olive oil 10.5 oz. can Campbell's Cream of Chicken Soup 2 cups chicken broth 2 cups milk 2 tbsp. flour 1 cup shredded cheddar cheese salt and pepper to taste

Directions:Chop broccoli and put into a microwavable bowl. Cover with plastic wrap and microwave until tender. In a large soup pot, sauté the carrots, onions and garlic in the butter and olive oil until soft. Add cream of chicken soup and chicken broth; mix well. Add the broccoli and cook for 1/2 hour. In a large bowl, mix milk, flour and cheese. Slowly ladle some of the hot soup into the bowl; mix well. Pour it back into the pot with the rest of the soup. Cook until cheese melts and it starts to thicken. Season with salt and pepper. |

Notes: This recipe is so simple. You can even use frozen broccoli to make it easier. It also freezes well, so make a big batch and keep some on hand for those crazy days when you just don't have time to cook.
