1 head of broccoli, chopped
1 cup carrots, grated or pre-shredded
1 medium onion, finely chopped
2 to 3 garlic cloves, chopped
4 tbsp. butter
1 tbsp. olive oil
10.5 oz. can Campbell's Cream of Chicken Soup
2 cups chicken broth
2 cups milk
2 tbsp. flour
1 cup shredded cheddar cheese
salt and pepper to taste

Chop broccoli and put into a microwavable bowl. Cover with plastic wrap and microwave until tender. In a large soup pot, sauté the carrots, onions and garlic in the butter and olive oil until soft. Add cream of chicken soup and chicken broth; mix well. Add the broccoli and cook for 1/2 hour. In a large bowl, mix milk, flour and cheese. Slowly ladle some of the hot soup into the bowl; mix well. Pour it back into the pot with the rest of the soup. Cook until cheese melts and it starts to thicken. Season with salt and pepper.

This recipe is so simple. You can even use frozen broccoli to make it easier. It also freezes well, so make a big batch and keep some on hand for those crazy days when you just don't have time to cook.
