1      (16 oz) one-step angel food cake mix
1/2  cup water
1 1/2  teaspoons almond extract
2      cups flaked coconut
1/2  cup well drained maraschino cherries -- chopped
1      cup chopped pecans
Directions:
Directions:
In mixing bowl, beat cake mix, water and almond extract on low speed for 30 seconds.  Scrape bowl; beat on medium for 1 minute.  Fold in coconut, cherries and nuts.  Drop by rounded teaspoonfuls onto a parchment paper-lined baking sheet. 
Bake at 350 for 10-12 minutes or until set.  Remove paper with cookies to a wire rack to cool.

Hint:  For a colorful Christmas cookie, use both red and green maraschino cherries.
