5 c. cooked Pumpkin or canned (but don't use pie filling)
2 c. maple sugar (if you cant find this use 1 1/2 c. maple syrup
2 "eggs", if you want it to be Vegan use 2 T. flaxseeds pureed 6 T. water
1 c. almond mile or other nut milk
3/4 c. safflower oil
1 tsp. vanilla extract
4 c. spelt flour (this is a much easier flour for your body to digest than most)
3 tsp. baking soda
3 tsp. baking powder
1 T. ground cinnamon
1 tsp. ground nutmeg
3/4 c. carob chips or nondairy chocolate chips
1 c. whole macadamia nuts (save a little for the top at the end)

Preheat oven to 350 F. Oil two "9x5" glass loaf pans.
Combine pumpkin puree, sugar, "eggs" milk, oil, and vanilla. In a separate bowl combine flour, baking soda, baking powder cinnamon, nutmeg, and most of the chips and nuts. Slowly add the wet ingredients to the dry ingredients.
Fill the pans with the batter. Top with remaining chips and nuts. Bake for 45 minutes to 1 hour or until the top springs back when pressed with finger.
