2         large gala apples -- thinly sliced
2        tablespoons  lemon juice
1         6 oz  package Baby spinach and spring greens mix
1         small red onion -- halved & thinly sliced
1 1/2   cups (6 oz)  shredded smoked Gouda cheese
1         cup  celery -- thinly sliced
1         cup  sweetened dried cranberries
1         cup  pecans
1          recipe  lemon-poppy seed dressing

Lemon-Poppy Seed Dressing

Process 2/3 cup vegetable oil, 1/2 cup sugar, 1/3 cup fresh lemon juice, 1
1/2 tablespoons poppy seeds, 2 teaspoons finely chopped onion, 1 teaspoon
Dijon mustard, and 1/2 teaspoon salt in a blender until smooth.  Store in
refrigerator up to 1 week.

Toss apples slices with lemon juice

Mix all ingredients together and top with full recipe of lemon-poppy seed dressing.

Serve immediately or cover and chill up to 8 hours.
