2 c. uncooked quick-cooking oats (or old fashioned)
½ c. brown sugar, packed
⅓ c. raisins (I also add other dried fruits such as cranberries or apricots)
1 tbsp. walnuts or pecans, chopped
1 tsp. baking powder
1 tbsp. cinnamon
1½ c. milk
½ c. applesauce
1½ tsp. vanilla
2 tbsp. butter, melted
1 large egg, beaten
cooking spray

Directions:
Directions:
Preheat oven to 375ºF. Combine first 6 ingredients in medium bowl.
Combine the milk, applesauce, vanilla, butter and egg.
Add milk mixture to oat mixture and stir well.
Pour oat mixture into an 8x8 square baking dish coated with cooking spray. I add a few pats of butter on top. Bake for 20 minutes.
