1 head cauliflower, cut into florets
1 Tablespoon olive oil
1 clove garlic, smashed
1/4 cup grated Parmesan cheese
1 Tablespoon reduced fat- free cream cheese
1/2 teaspoon kosher salt
1/8 teaspoon pepper

Directions:
Directions:
Steam cauliflower for 7-10 minutes. Use steam pan or pampered chef steamer.
While steaming heat olive oil in small skillet over medium heat until softened. About 2 minutes
Transfer half the cauliflower to a food processor and blend Add remaining and blend until creamy. Blend in the garlic, cheeses. Salt and pepper
(I used my Oster Immersion Hand Blender )
