2 cups flour
1 cup rolled oats
2 t. baking powder
1/2 t. baking powder
1/2 t. salt
1/2 t. cinnamon
1/4 t. ground ginger
1 cup milk
3/4 cup applesauce
3/4 cup packed brown sugar
1/3 cup oil
1 egg
2 t. vanilla
1 1/2 cups grated carrots (about 3 medium carrots)
1 cup crushed pineapple
1/2 cup grated zucchini (optional)

Directions:
Directions:
Preheat oven to 375º. Grease, (or use cupcake liners), a 12 cup muffin pan.
In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, cinnamon, and ginger. In a medium bowl, whisk together the milk, applesauce, brown sugar, oil, egg, and vanilla. Pour wet ingredients over the dry ingredients and whisk just until all ingredients are incorporated. Gently stir in the carrots, and pineapple. Divide mixture between cups and fill to the top.
Bake for 20-25 minutes or until toothpick inserted into the center comes out clean. Store in an airtight container at room temperature for 2-3 days or freeze.
