12 slices white bread
1 lb. deveined,shelled shrimp
1/4 cup finely chopped green onion
1 Tbl. dry sherry
2 tsp. salt
1 tsp sugar
dash pepper
1 Tbl. cornstarch
1 egg,beaten
1 can(8 oz.)water chestnuts,drained and finely chopped
salad oil for frying
chopped parsley

Directions:

1- Trim crusts from bread; let slices dry out slightly.
2-Chop shrimp coarsely by hand; in medium bowl,toss with onion,sherry,salt,sugar,pepper and cornstarch. Mix well.Stir in beaten egg and water chestnuts.Mix well.
3- Spread mixture on bread;cut each slice into quarters(squares or triangles)
4- In large heavy skillet or saucepan,heat oil(about 1 inch deep) to 350ºF on deep-frying thermometer.
5-Drop the bread pieces,several at a time,shrimp side down, in hot oil. Fry until the edges of the bread begin to brown.
6- Drain well on paper towels. Cool.

I would make these again. You have to be careful with the hot oil though. If it's too hot it will sputter and burn you.
