4 tbsp. butter
4 tbsp. flour
3-4 cups whole milk or half and half
8 oz. Velvetta cheese cubed
6-8 oz. white cheddar grated
6-8 oz. black diamond White cheddar grated
6-8 oz. sharp yellow cheddar grated
4 oz. mascarpone cheese

1# of pasta - elbow or any small shape you prefer

Directions:
Directions:
1. In a sauce pan. Melt butter add flour cook until flour becomes golden brown stirring constantly
2. Add milk- stir until thickened about 5 minutes
3. On low heat add cubed veletta cheese let melt
3 add all grated cheese a little at a time stirring make sure no sticking to bottom of pan
4. add mascarpone stir until melted.
5. Cook pasta according to directions.
6. drain pasta well- add cheese sauce
