1 large Texas Ruby Red grapefruit
2 cups fresh or frozen cranberries
3/4 cup granulated sugar
1/2 cup pecans (can toast the pecans for more flavor)

Directions:
Directions:
1.Thinly peel grapefruit to remove the outer skin and white pith.
2. We separate each section of grapefruit and discard any pith and thick membrane .
3. Place grapefruit in food processor bowl. Drain off excess juice.
4. Add cranberries, sugar and pecans
5. Pulse umtil mixture is chopped fine.
6. Transfer to bowl and refrigerate for a minimum of 2 hours before serving. Freshly made relish is more pungent. Overnight refrigeratoin results in a much mellower flavor.

On our 39th Anniversary we went to Fredricksburg Texas and stayed in the beautiful Victorian Bed & Breakfast. While there we attended a cooking class where we learned to make this relish. We have enjoyed it every holiday since then.
