1 lb. carrots, sliced
2 T margarine
1 small onion
1 T flour
˝ c. broth
2 T half-and-half
salt and pepper, to taste
⅛ t dill weed
finely chopped parsley

Directions:
Directions:
Peel and slice carrots. Cook covered in small amount of water over medium heat until tender. Remove from heat and drain. In skillet over medium-high heat, melt butter. Sauté onions until tender. Stir in flour, salt and pepper. Cook for 1 minute. Gradually add broth and half-and-half, stirring constantly until mixture thickens and starts to boil. Add dill weed and some chopped parsley. Pour over cooked carrots and stir to coat.
