1 cup margarine or butter
2 cups chopped onion
2 cups chopped celery
1/4 cup parsley sprigs or dried
12-13 cups dry bread crumbs
(I buy a bag of dried cubes and add a bag of Herb Seasoning dried bread cubes)
1 1/2 tsp sage
1 tsp dried thyme
1/2 tsp pepper
1 1/2 tsp salt
2 well beaten eggs
3 1/2 to 4 cups chicken broth (Swansons)
( I use Chicken base to make the broth, mix 3-4 Tbls with 4 cups water. I think the base makes a better tasting broth) I also use the chicken base when making gravy.

I put the giblets (turkey neck, livers, heart, gizzard in pan and cover with water to cook about 30 minutes. Cut up the celery and onion and add this and the stick of butter to the water/giblet pot. Cook all together till tender. Then I add the chicken base to the water. So you have it all in one pan. You can even do this the day before. Dump the dried bread cubes in a large mixing bowl, Tupperware works good. Take the giblets out of pan to cool a bit and cut into small pieces. I actually only use the neck for flavoring, usually the dog gets that, but cut up the rest. Pour, giblets, onions, celery and chicken water broth over the dry bread crumbs, add the dry seasonings and mix well. Now you add the beaten egg mixture and stir well. You can add more chicken base broth mixture if you think its to dry, you dont want it to sloppy but well moistened. You can stuff your turkey or chicken with part of the dressing and the rest put in a crock pot that you have sprayed with Pam. Pack lightly in crock pot, Cover. Set on high for first hour, then reduce to low and cook for 4-8 hours longer. It will make moisture on the crock pot lid, so stir every few hours.

This was a recipie of a friend of mine Debbie Moody who lost her battle with cancer. I think about her every time I make it. This is my usual way to make dressing and our holiday favorite. I like that you can stuff your bird and use the rest in the crock pot and that you can do all the cutting and cooking the night before then just mix it all on in the morning, especially if your putting a turkey in at 5 in the morning.
