2 cups all-purpose flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cups fresh OR frozen raspberries OR blueberries
2 eggs, lightly beaten
1 cup (8oz.) sour cream
1/2 cup canola or vegetable oil
1/2 tsp. vanilla extract
2 Tbsp. white sugar (for optional topping)
2 Tbsp. brown sugar (for optional topping)

Directions:
Directions:
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; add berries and toss gently. In another bowl, combine the eggs, sour cream, oil, and vanilla. Stir into dry ingredients just until moistened.

Fill greased muffin cups 2/3rds full. If desired, mix the white sugar and brown sugar and sprinkle on top before baking. Bake at 400º for 18 - 22 minutes or until a toothpick inserted near the center comes out clean.

Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
