1 cup butter, softened
1 cup sugar
2 cups all-purpose flour
1/2 tsp. baking soda
1 (10 oz. jar) lemon curd
2/3 cups flaked coconut
1/2 cup chopped almonds, toasted

Directions:
Directions:
Preheat oven to 350º. In a large bowl, cream butter and sugar until light and fluffy. Combine flour and baking soda, gradually add to creamed mixture and mix well.

Set aside 1 cup of the mixture for the topping. Press remaining mixture onto the bottom of a greased 9 X 13 inch baking dish. Bake 12 to 15 minutes or until edges are lightly browned. Cool for 10 minutes.

Spread the lemon curd over the crust. In a small bowl, combine the coconut, toasted almonds, and reserved topping mixture; sprinkle over lemon curd.

Bake for 18 - 22 minutes or until golden brown. Cool completely on wire rack. Cut into bars.

I tried this recipe for Jan Thompson, as I know she loves lemon. I'm not a big fan of lemon, but I liked this one.
