2 c sugar
3 c flour
2 eggs
½ t nutmeg
1 c salad oil
½ t soda
2 t cinnamon
½ c raisins/dates
1 t vanilla
¼ c lemon juice
1 c pecans
4 c grated fresh pears

Directions:
Directions:
Combine pears, sugar, pecans and dates. Let set 1 hour, stirring often. Beat eggs. To eggs, add oil and vanilla. Mix well. Add egg mixture to pear mixture. Sift flour, spices and baking soda. Add to pear mixture. Bake at 350° for 1¼ hours. Bake in 2 layer cake pans or 1 Bundt or tube pan, greased and floured. Use Cream Cheese Frosting to ice cake (found in Frosting and Icings subcategory of Desserts section of this cook book).
